The Unhealthy Evolution of WheatI have talked a lot about healthy eating and drinking in my previous posts. It is essential to eat lots of vegetables, fruit and drink pure water; but what about wheat products? Wheat has evolved into something that is no longer a natural substance and can have negative health effects. We are seeing more wheat allergies than ever before. There's a reason for this; the following will explain. How has wheat changed? Wheat production is not a new phenomenon. Wheat has been successfully cultivated for thousands of years. Since the Industrial Revolution, wheat cultivation has undergone a dramatic change. Everything has changed; how we grow grain, how we process it, the way we store it and even the way we eat it. Yes, a lot has changed. The steel roller mill appeared around 1870, replacing stone mills (almost completely within ten years). This is where industrial white flour was first introduced on a large scale and cheaply. Instead of crushing all the components together as in the stone mill, the steel roller mill could separate the flour with ease, allowing economical production of white flour. Not only was technology exploding in terms of machinery, but modern science began to take effect. GMOs might be something you've heard of. If you haven't, it's time to start learning about the dangers of GMO foods. GMO stands for “genetically modified organisms”; that is, a seed, for example, is modified so that it is no longer in its natural state. This change creates a greater return, but at what cost to health? It really is a vicious circle. Pesticide companies like Monsanto and Dupont have had a lot to do with the changes taking place. Pesticides have complemented GMOs; creating greater efficiency and a greater quantity of nutrients.5. Buckwheat: It's technically a grass, but the seed is ground into flour. Buckwheat is known to lower cholesterol and help with diabetes (by lowering glucose levels).6. Kamut: Kamut is actually a brand. Many people recognize Kamut, which is actually the name of an ancient Khorasan grain. This grain provides protein, antioxidants, zinc and selenium. These are just SOME of the healthiest and most well-known alternatives. Notice that the benefits of these alternatives are opposite those of modern wheat? Modern wheat causes many problems that these alternatives actually prevent. It's time to rethink our modern wheat. Start making small changes by incorporating more beneficial grains into your diet. Once you start making these small changes, not eating wheat will become natural for you. More importantly, it will be more natural for your body.
